I’m not at the point where I can raise chickens and all, so to be prepared for baking, I’ve tried to be on top of egg subs.  My container of flaxseed meal apparently isn’t the best like I thought.  Instead, it’s all about chickpeas (buy them bulk to save)

The other day my wife was making a ‘Gelatin Egg’. I sure wasn’t brave enough to try it and give you a report on how it was, but she seemed to like it. She sprinkles beef gelatin in various foods for some additional protein, so we have some already on hand.

I looked up a recipe for you:

Ingredients
¼ cup water
1 tablespoon (10 grams) Beef Gelatin

Instructions
Place the water in a small saucepan. Sprinkle with gelatin, sprinkling over the entire surface of the water. Let the saucepan sit untouched for 5 minutes.
After the 5 minutes is up, turn the burner on low and whisk for 1 minute, or until texture is smooth.
Use the mixture in the cake, the batch of cookies, or that you’re making today!

I have family who are allergic to eggs 🥚 (thank goodness I dodged that bullet!), and I have seen them substitute bananas or apple sauce for eggs like your guide says.

 

Rather than try to substitute eggs I have a few eggless cake recipes. Some of the Wartime cookbooks are brilliant for ‘making do’. 

Enriched doughs and scones are also worth considering. Again, an internet search is worthwhile.
